Celia Brooks Brown, Entertaining Vegetarians and Bill Jones, Sublime Vegetarian. These books proved to be very attractive to me, a confirmed non-vegetarian, as they take the soy and brown rice out of the food and give you dishes that are attractive on their own, or as an addition to a meat, poultry or seafood dish. You could also try Bill Jones' Chef's Salad. While not strictly vegetarian, there are lots of veggie dishes and dressings in there.
